Irish Stout & Chocolate Pot de Creme

In celebration of St. Patricks Day I thought I would we would add an Irish twist to the traditional chocolate pot de creme by adding Guinness Extra Stout. My recipe gives you the option of using white sugar or coconut sugar, my latest baking delight. I also added a little cinnamon. I find it adds a special taste to my recipes where chocolate and beer are the main ingredients. This is a great way to impress your friends. Find fun shapes to use for your "pots" at your local pottery store or any discount store. The "pots" don't need to match.
Irish Stout & Chocolate Pot De Creme
- 2/3 cup of milk
- 3/4 cup semi sweet chocolate chips
- 2 tabesppons of Guinness Extra Stout
- 1 tablespoons of white sugar or coconut sugar
- 1 tablespoon of brown sugar
- 1 egg
- 1/4 teaspoon of salt
- 1 teaspoon of cinnamon
- 8 LINDOR milk chocolate truffles
- 3- 4 oz of dark chocolate to use for shavings
- *Decorative toppings of your choice.
- Homemade whipping cream, in a rush try store bought organic whipping cream from your local grocery store.
- Heat the milk up in a small pan on medium heat. Bring to slightly boiling.
- While the milk is heating up add the following to the blender; chocolate chips, truffles, egg, sugars, salt, coffee and Guinness Stout. On low speed, blend until everything is chopped up.
- When the milk has come to a boil, slowly add it to the blender while it is running on low until you've added all the milk and the mixture is smooth.
- Pour the mixture into 4 small cups or mini glasses, I love the small WECK jars as seen in the photo.
* I toasted coconut and added some green colored sugar. This is a fun recipe to experiment with by adding liquor of your choice.
