Let’s start this post with a little history. Cinco de Mayo is May 5th, in the United States we often associate it with the celebration of Mexican American culture.
Many people in the U.S. believe it is Mexican Independence Day and if you believe this you would be wrong!
In Mexico, Cinco de Mayo, is observed to commemorate the Mexican Army’s victory over the French Empire at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza.
It is more a ceremonial celebration.
Mexican independence Day is celebrated on September 16, a second reason to celebrate!

Sugar Cookies with Lime Filling

his recipe can also be made using your favorite sugar cookie recipe, frozen or pre-cut sugar cookie dough.
Below is my favorite sugar cookie recipe.
I would like to claim to be the author of this recipe but after reviewing many cookbooks and surfing the internet this is by far the best and easiest sugar cookie recipe.I have tweaked this cookie recipe just a little.
There are so many things you can do to customize this basic sugar cookie, so make it your own.
Sugar Cookie Ingredients
- 3 cups of all-purpose flour
- 1 ½ tsp. of baking soda
- 1 tsp. of fine sea salt
- 3 sticks unsalted butter softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 tbs. pure vanilla extract**
- 1 tsp. almond extract (optional)
Instructions
Preheat the oven to 375 degrees and line your baking sheets with parchment paper.
- In a medium bowl mix the flour, baking powder and sea salt in a medium bowl.
- In a large bowl using a hand mixer or electric mixer cream the butter and sugar until light and fluffy. Lower the setting of the mixer and add the eggs and vanilla. Remember to scrap down the side of the bowl. Beat 30 seconds more.
- While your mixer is on, slowly add your flour mixture. Always remember, scrape down the side of the bowl to assure everything is blended.
- Place about a ¼ c of sugar *** in a small bowl. Choose the size of your cookie scooper depending on the size you would like your cookie to be. Scoop your dough and roll it into a ball, do not overwork the cookie dough. Roll each ball in the sugar and shake off the excess, then place it on the cookie sheet about 2 inches apart. Take the bottom of a drinking glass and press down on each cookie ball until its 1/3 -1/2 inch thick.
- Bake each sheet of cookies 9-11 minutes, until the edges are slightly golden and the centers are barely set.
Lime Filling*
- 1 cup of unsalted butter
- 4 cups of Dominoes Confectioners Powdered sugar
- 1 tablespoon of lime zest
- 3 tbsp. of fresh squeezed lime juice. (For the adult version, 2 tbsp of Tequila and 1tbsp of fresh squeezed lime juice, another adult option is to buy any brand of pre-mixed margarita drinks and add 3 tbsp. to your frosting recipe).
- In a stand mixer with a paddle attachment (This can be done with a hand mixer, just take it slow), mix the butter and zest until smooth, using the slow speed, slowly add the Confectioners’ sugar and 3 tbsp. of liquid of your choice. Mix slow until well combined, scrape down the sides, then turn the mixer to medium and beat until creamy and you don’t see any lumps.
- When cookies are cool, turn half the cookies upside down and using a piping bag pipe about 1-2 tbsp, depending upon the size of your cookie onto the bottom cookies. Place top on the cookie, creating your lime filled or tequila lime cookie.
- Here is a hack for those who are in a rush. Purchase pre-made frosting and add the lemon zest and 1 -2 tbsp of the liquid mix suggested above to create your filling. I suggest you use less frosting for your filling mix as store bought frosting is much sweeter.
